Pasta Innovator Designs New Noodle Shape and Cookbook #

A food enthusiast named Dan Pashman spent several years creating a new pasta shape to improve the sauce-holding capabilities of noodles. The result is a short, curved pasta with two ruffled sides and a sauce-holding well in between. This new noodle, called cascatelli, gained popularity quickly, with the first batch selling out online within hours. Recognizing the need for creative pasta toppings, Pashman assembled a team to develop a cookbook called “Anything’s Pastable: 81 Inventive Pasta Recipes for Saucy People.” The cookbook aims to introduce home cooks to a wide range of global flavors and ingredients to enhance their pasta dishes. By encouraging experimentation, Pashman hopes to redefine the possibilities of pasta as a versatile canvas for various flavors.
